Chicken Caprese With Tomato-Basil Cream

Chicken Caprese With Tomato-Basil Cream

1 cup soft, fresh breadcrumbs
1/2 cup crumbled feta cheese
1 tablespoon chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
2 tablespoons lemon juice
4 boneless, skinless chicken breasts
Tomato-Basil Cream
Garnishes: lemon slices, basil sprigs

Stir together first 5 ingredients in a shallow bowl. Whisk together olive oil and lemon juice until blended. Dip chicken into olive oil mixture, and dredge in breadcrumb mixture, pressing to coat.

Place on a lightly greased baking sheet or in an 11- x 7-inch baking dish. Sprinkle with remaining breadcrumbs. Bake at 375 for 30 to 35 minutes or until chicken is done. Serve with Tomato-Basil Cream; garnish, if desired. Makes 4 servings

Tomato-Basil Cream
1 cup spaghetti sauce
2 tablespoons light sour cream
1 tablespoon chopped fresh basil
1/8 teaspoon sugar

Microwave all ingredients in a microwave-safe bowl at HIGH 2 minutes or until thoroughly heated, stirring at 30 second intervals. Makes 1 cup
