Apricot Chicken Drumsticks

Apricot Chicken Drumsticks

12 chicken drumsticks (3 pounds)
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup canola oil
1/4 cup apricot jam, warmed
1/4 cup prepared mustard
1 tablespoon brown sugar

Sprinkle chicken with salt and pepper. For sauce, in a small bowl, combine the remaining ingredients. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill chicken, covered, over medium heat for 15-20 minutes or until a meat thermometer reads 180, turning and basting occasionally with sauce. Cool for 5 minutes. Cover and refrigerate until chilled. Makes 6 servings.
